Gluten free, white sugar free chocolate chip cookies

We have been trying to move away from refined sugar as much as possible. I have noticed that using ALL of one sugar sub does not work well. The taste and texture are just not good. However, if I mix my different sugar subs, the taste and texture are great and more like traditional sugar.

Please note: If you have dogs, do NOT let them anywhere NEAR the xylitol. For some reason, xylitol causes dogs to develop diabetes. Our beloved dachshund KC died from diabetes after ingesting xylitol.

  • 1 cup butter
  • 1/3 cup coconut sugar
  • 1/3 cup xylitol
  • 1/3 cup monk fruit
  • 1 egg
  • 1 teaspoon pure vanilla
  • 2 cups high-quality all-purpose gluten free flour blend with xanthan gum (Better Batter, Bloomfield Farms, Jules Gluten Free)
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt (I use pink himalayan)
  • 1 12oz bag chocolate chips or cacao nibs


  • Preheat oven to 350F.
  • Cream butter and sugars in a bowl, then add egg and vanilla.
  • Mix dry ingredients together well.
  • Blend dry ingredients into creamed mixture.
  • Stir in chocolate chips or raisins (if using) and roll into 1"-1 1/2" balls (or just plop them like I do!) and place 1/2" apart on parchment-lined cookie sheet.
  • Bake for 10-13 minutes.
  • Let cool for at least 5 minutes.
  • Chow down!
